What Butchers / Meat Retailers do
- Cut meat to standard size by cutting, trimming and shaping
- Divide carcasses into primary and secondary cuts
- Display meat in packs and store for sale
- Order meat supplies from wholesalers using International Ausmeat Language
- Weigh and check stock when delivered
- Assemble and operate machines such as mincers, grinders, mixers, patty-forming and sausage-forming
- Ensure hygienic handling of food, including appropriate use of detergents and sanitisers to prevent food poisoning and contamination of premises and equipment
- Support clients such as hotels and restaurants in menu planning, food portions estimations and production costs
- Perform various retail functions including collection of payments and sales
- Prepare meal packs, marinated meats and ready-to-cook dishes for display and sale
- Advise customers about different cuts of meat, cooking methods, storage requirements and nutritional value of meat.
