What Butchers / Meat Retailers do

  • Cut meat to standard size by cutting, trimming and shaping
  • Divide carcasses into primary and secondary cuts
  • Display meat in packs and store for sale
  • Order meat supplies from wholesalers using International Ausmeat Language
  • Weigh and check stock when delivered
  • Assemble and operate machines such as mincers, grinders, mixers, patty-forming and sausage-forming
  • Ensure hygienic handling of food, including appropriate use of detergents and sanitisers to prevent food poisoning and contamination of premises and equipment
  • Support clients such as hotels and restaurants in menu planning, food portions estimations and production costs
  • Perform various retail functions including collection of payments and sales
  • Prepare meal packs, marinated meats and ready-to-cook dishes for display and sale
  • Advise customers about different cuts of meat, cooking methods, storage requirements and nutritional value of meat.
